1 cup dates (I like medjool)
1 1/2 cups shredded coconut, plus more for rolling the balls
1-2 tablespoons pure maple syrup
- Place the dates, 1 1/2 cups coconut, and maple syrup in a food processor and blend until a firm paste forms.
- Roll the paste into 1 1/2 inch balls and place them on a lined cookie sheet. Place the remaining coconut in a shallow bowl or plate and proceed to roll each ball in the coconut until covered.
- Place the balls back onto the cookie sheet and refrigerate until firm. Store extras in an airtight container. Enjoy!
